APAM PISANG(BANANA MUFFIN)
2 cups Plain flour(sifted with the baking powder)
1 cup Castor/Granulated/Brown sugar
6-8nos Bananas (emas/berangan)I just use whatever that's available
4 Eggs
1 cup Oil(any kind)
1 tsp Baking powder
1 tsp Bicarbonate of soda
1. Mashed bananas,put in the bicarbonate soda and mix well.
2. Mix sugar and eggs 'til well blended. Fold in the sifted flour a little at a time,mix well.
3. Pour in oil,mix again. Then add the mashed bananas.
4. Pour in oiled apam moulds/small tea cups. Steam over high heat,boiling water for about 20-25 minutes.
If you prefer,you can just use a regular cake tin but grease and line it first and steam for 1 hour.
