MILO BISCUITS

These are SO delicious!  I've made these a few times and my family loves them! For the recipe, click here.

APAM PISANG(BANANA MUFFIN)

2 cups  Plain flour(sifted with the baking powder)
1 cup   Castor/Granulated/Brown sugar
6-8nos Bananas (emas/berangan)I just use whatever that's available
4          Eggs
1 cup   Oil(any kind)
1 tsp    Baking powder
1 tsp    Bicarbonate of soda

1. Mashed bananas,put in the bicarbonate soda and mix well.
2. Mix sugar and eggs 'til well blended. Fold in the sifted flour a little at a time,mix well.
3. Pour in oil,mix again. Then add the mashed bananas.
4. Pour in oiled apam moulds/small tea cups. Steam over high heat,boiling water for about 20-25 minutes.
    If you prefer,you can just use a regular cake tin but grease and line it first and steam for 1 hour.

APAM PISANG COKLAT

(A)Sifted:
2 cups  Plain flour
2 tbsps Cocoa powder
1 tsp     Baking powder
1 tsp     Bicarbonate of soda(optional)

(B):
1 cup  Bananas(Emas/Berangan)mashed
1 cup  Oil(any kind)
1 1/2 cups Brown sugar/1 cup granulated sugar
2         Eggs

1. Sift A over a bowl.
2. Pour in B into A and mix well.
3. Pour into apam moulds or small cups and steam over high heat for 20-25 minutes.
    You can use a cake tin,too. Steam for 1 hour.
Have you ever tried steaming a cake? It's really good!The texture is light and fluffy. This is a chocolate cake recipe I got from a forum I was in a few years back,cari.com.my. Please try it. You won't regret it!

STEAMED CHOCOLATE CAKE

1 cup       Cocoa powder
1 cup       Castor sugar/granulated sugar
1 cup       Evaporated milk
1/2 cup    Sweetened condensed milk
1 cup       Oil(any kind) or 250gm butter/margarine
1 1/4 cup Plain flour
1 tsp        Baking powder
1 tsp        Bicarbonate of soda
3              Eggs

Mix cocoa powder,sugar,evaporated and condensed milk and oil in a medium pot. Cook on a low fire til all are melted and combined well. Leave aside for a while.
Sift flour,baking powder and soda. Beat eggs til frothy and pour into choc mixture. Mix well and fold in flour a bit at a time. Mix well again and pour into a sieve over a 20cm greased and lined cake tin. Cover with aluminium foil. Steam over medium fire for about 1 hour.
*Put into steamer when the water is boiling and you can check/wipe the cover only after 30 minutes of steaming.

BUTTER CAKE(got this from Kitchen Capers)

250gm butter
220gm castor sugar
6 large eggs
1tsp    vanilla essence
300gm self-raising flour(sifted)
1/2cup evaporated milk(3/4cup if you want it moistier)

1. Preheat oven to 180C.
2. Beat butter and sugar til white and fluffy. Add in eggs one at a time and mix well. Then add in vanilla essence and milk and mix well.
3. Lastly,fold in sifted flour and mix well. Pour into a greased and lined cake tin and bake for 50-60mins. Insert a skewer to test if it's done.

For Marble cake,just replace 30gm of self-raising flour with cocoa powder. When butter mixture is done,divide into 2 and add cocoa into one part.

For Coffee Butter cake,dissolve 2 tbsps instant coffee with 2 tbsps hot water and add into mixture.
This is my all-time favourite versatile cake recipe. To make Chocolate cake,just add 2 tablespoons of cocoa powder and 2 tablespoons of milk. For Orange cake,just add 1/2 tablespoons of orange juice. Same goes for Pandan Cake,1 teaspoon of pandan extract and 2/3 drops of green food colouring.

Basic Butter Cake Recipe:

250gm Plain flour sifted together with 1 1/2tbsps Baking powder
250gm Castor sugar
250gm Butter/Margarine
5         Eggs
1tsp    Vanilla extract
2tbsp  Milk(optional)

1. Mix butter and sugar in electric mixer until pale and fluffy.
2. Add eggs one at a time until well mixed.
3. Put in vanilla extract.
4. Fold in flour a little at a time. Mix well.
5. Pour in a lined and buttered 22' round cake pan. Bake for 1 hour at 180C pre-heated oven.
